2016 Top Chef winner and South Florida’s top southern-style restauranteur to headline

VeritageMiami will celebrate its 21st anniversary with four new dates in 2017, after the original dates were postponed due to Hurricane Matthew. The four days of world-class culinary indulgence have been extended throughout the spring, beginning on January 27 with an Interactive Dinner, followed by a Craft Beer Tasting on February 9, a Fine Wine Tasting on March 15 and an Auction and Bubbly Brunch on March 26. Jeremy Ford, winner of Bravo’s “Top Chef” season 13, will lead guests in preparing a three-course meal at the Interactive Dinner. The new Auction and Bubbly Brunch on Key Biscayne, will feature southern favorites from the menus of Yardbird Southern Table and Bar, Swine Southern Table and Bar and Spring Chicken – the restaurants of 50 Eggs Inc., founded by John Kunkel.

Labeled the ultimate good time for foodies, the event hosts 700 energetic guests who prepare a three-course meal under the direction of Chef Ford. Jeremy Ford, winner of Bravo’s Top Chef season 13 and the chef de cuisine at Miami’s Matador Room by Jean-Georges, will headline VeritageMiami’s Interactive Dinner on Friday, October 7.  Labeled the ultimate good time for foodies, the Interactive Dinner will take place at the JW Marriott Marquis Miami, where more than 700 energetic guests bravely sport cooking aprons and toques as they prepare a three-course meal, under the direction of Chef Ford.  Johnson & Wales University students will serve as sous chefs, helping guests at each table, and the dinner is accompanied by Best in Glass gold and silver medal wines, which were previously selected by some of South Florida’s top sommeliers.  Ford began his culinary career at the legendary Los Angeles French eatery, L’Orangerie under world-famous Chef Christophe Eme.  Later, he worked at Patina with Chef Joachim Splichal, and in 2008, secured a position with the celebrated South Florida chef, Dean Max at 3030 Ocean in Fort Lauderdale.  Over the course of five years, Ford went from sous chef to chef de cuisine to executive chef to corporate chef at 3030 Ocean, and worked with Max to open four restaurants that shed light on the growing farm-to-table movement.  Ready for his next step, Ford secured a job at the new restaurant from Michelin-star celebrity chef, Jean-Georges Vongerichten, Matador Room, before deciding to compete in and win Top Chef in March 2016.

Brand new to this year, VeritageMiami will culminate on Sunday, October 9 with an Auction and Bubbly Brunch at The Ritz-Carlton Key Biscayne.  Led by the king of southern fare John Kunkel and his 50 Eggs Inc. team of James Beard-nominated and award-winning restaurants Yardbird Southern Table and Bar, Swine Southern Table and Bar and the newly opened Spring Chicken.  Kunkel has always had a passion for cooking, fueled by his southern roots, where food assumed a central role.  In 2011, after spending hours perfecting his family recipes, Kunkel opened his first southern-style restaurant Yardbird, and the rest is history.  Some anticipated favorites include Kunkel’s grandmother’s famed recipe for 27-hour brined and crispy fried chicken served with heavenly waffles and buttermilk biscuits.  Award-winning wines from the Best in Glass Wine Challenge and plenty of champagne will be paired with the three-course brunch, and one-of-a-kind experiences will be auctioned off.

On April 15 – 18, more than 3,500 food, wine and beer lovers gathered at the 20th annual VeritageMiami to eat, drink and unite, raising more than $500,000 for United Way of Miami-Dade. The four day gathering was presented by City National Bank. Guests enjoyed a world-class craft beer tasting, a stellar wine and food tasting, an Interactive Dinner led by five of Miami’s top female chefs – Eileen Andrade of FINKA Table & Tap, Adrianne Calvo of Chef Adrianne’s Vineyard Restaurant and Wine Bar, Paula DaSilva of 3030 Ocean at the Harbor Beach Marriott Resort & Spa, Cindy Hutson of Ortanique on the Mile and Dena Marino of MC Kitchen - and an experience unlike any other at the Auction & Wine Dinner on the diamond at Marlins Park.

The VeritageMiami Craft Beer Tasting at Wynwood Walls kicked things off on Wednesday, April 15, where 1,000 guests enjoyed more than 140 different craft beers, perfectly paired with fare from 25 local restaurants, including: Quality Meats, Jimmy’z Kitchen, Proof Pizza & Pasta, EDGE Steak & Bar, R House, Shake Shack, Whole Foods Market, and Wynwood Kitchen & Bar to name a few. The young, eclectic crowd complemented the colorful walls, jammed to the tunes of the popular TreeHause Band, and voted for the People’s Choice Awards - ultimately crowning R House and Wynwood Brewing Company. Seventy-five of Miami’s trendiest breweries and distributors kept the beer flowing, including: Biscayne Brewing Co., Concrete Beach Brewery, Descarga Brewing, Funky Buddha Brewery, J Wakefield Brewing and M.I.A. Brewing Company, among others. Festivities continued at the United Way Young Leaders After-Party at MAPS Backlot, where guests played life-size beer pong thanks to Digest Miami.

From funky to fancy, the Fine Wine Tasting took place the next day at Village of Merrick Park. More than 1,000 guests strolled the garden floor of the mall, enjoyed live music from The French Horn Collective and reveled in 400 wines from around the world. Two pavilions: World of Wines Guide and Wines of Israel, served as the entryway to San Lorenzo Avenue, where another 170 wineries poured alongside 25 restaurants, including: BLT Prime Miami, Buns & Buns, J&G Grill, Piripi, SOHO Bay, Swine Southern Table & Bar and Toro Toro, among others. Uvaggio Wine Bar’s pork terrine and 2 Amigos’ Albariño received the evening’s People’s Choice Awards. United Way Trustees enjoyed a private lounge, hosted by Wine Spectator, featuring food and treats from Anacapri and Miami Cigar Company. Just before the event, the 6th annual Associate Legal Mingle took place at Artefacto, with 200 members of the legal community gathering for a great cause.

On Friday, April 17, the InterContinental Miami lit up VeritageMiami green as host of the Interactive Dinner, where five of Miami’s top female chefs led 700 guests through their own five-course meals. Before dinner, guests mingled at the Bacardi cocktail reception and bid on exclusive silent auction items in the mezzanine. Chef Paula DaSilva kicked off the dinner with one of her signature seafood starters, White Water Clams with Blue Point White IPA and Orange Broth. For the second course, guests made a classic Italian Parmigiano Reggiano Cavatelli with Vine-ripened Tomato Sauce, Chef Dena Marino’s great grandparents’ original, delizioso recipe. Next, Chef Cindy Hutson brought the flavors of the tropics with a Pan-roasted Golden Tile in Smoked Tomato Creole Sauce. For the fourth course, Chef Eileen Andrade flaunted her Latin roots with a superb Churrasco with Asian Chimichurri, Sweet Potato Mash and Green Beans. Finally, for a sweet finish, Chef Adrianne Calvo led guests through a delightful Strawberry Shortcake Napoleon, topped with chocolate ganache and confections. NBC 6 South Florida’s Kelly Blanco served as mistress of ceremonies, and interacted with guests at their cooking stations, reporting back to Indulge Magazine’s Betty Cortina, who kept the audience up to speed with the chefs’ cooking instructions from the stage. Dozens of culinary students from Johnson & Wales University served as sous chefs at the guests’ tables.

The festivities concluded at Marlins Park on April 18, with the bright and bold Auction & Wine Dinner on the Diamond. The night included an amped-up live and silent auction, dinner, a Piper-Heidsieck Champagne reception, award-winning “Best in Glass” wines and a totally ‘80s dance party on the sky terrace, overlooking downtown Miami’s skyline. VeritageMiami, presented by City National Bank, is proud to announce the 2015 Interactive Dinner headlining chefs: Eileen Andrade of FINKA TABLE & TAP; Adrianne Calvo of Chef Adrianne’s Vineyard Restaurant and Wine Bar; Paula DaSilva of 3030 Ocean at Harbor Beach Marriott Resort & Spa; Cindy Hutson of Ortanique on the Mile; and Dena Marino of MC Kitchen. The Interactive Dinner is considered one of the year’s most unique culinary experiences, where guests will team up and cook five-course meals under the tutelage of these distinguished chefs, who recently graced the cover of INDULGE Magazine. All proceeds benefit United Way of Miami-Dade.

Jorge Gonzalez, president and CEO of City National Bank, alongside his wife Melinda Gonzalez, will co-chair the Interactive Dinner, and as such have been dubbed the Ministers of Fundom of the Third Knight.

The Interactive Dinner is set for Friday, April 17, at the InterContinental Miami. Each chef will bring her unique flavors and background as she guides guests in preparing a course, with Johnson &Wales University culinary students serving as sous chefs and sommeliers.

Eileen Andrade is the owner of FINKA TABLE &TAP in West Kendall, where Andrade serves up her unique twists on traditional Latin cuisine. Finka’s menu is inspired by Andrade’s travels to South Korea and her Peruvian mentor, chef Omar Caycho, and of course, her Cuban roots. Andrade grew up in the kitchen, working alongside her parents and grandfather who opened Islas Canarias, a well-known Cuban restaurant on Coral Way back in 1977. After working with her family at Islas Canarias, Andrade and her brother Jon opened their own mobile restaurant CUBANCUBE in 2011, and later FINKA TABLE &TAP in the spring of 2014. To much acclaim, Andrade has been acknowledged by the Miami Herald’s prestigious list “South Florida’s Food 50” in 2015; and Zagat Miami’s “30 Under 30” in 2014.

Adrianne Calvo is the owner of Chef Adrianne’s Vineyard Restaurant &Wine Bar – a concept inspired by Calvo’s time in Napa Valley working under chef Thomas Keller and chef Cindy Pawlcyn. She attended Johnson &Wales University, through which she competed in more than 40 national competitions and became the youngest person to cook for the United Nations. After graduating, Calvo began to work under executive chef Patrick Lassaque of the Ritz Carton in Paris and at Mandarin Oriental, before opening her restaurant in 2007. In 2009, Calvo became the spokesperson for Panda Kitchen and Bath, providing her with increasing television exposure on her weekly cooking segments with NBC’s “6 in the Mix” and Univision. Calvo has also published books to include: “Maximum Flavor,” “Driven by Flavor Fueled by Fire.” In 2006, Calvo established the Make It Count Foundation, which benefits children suffering from cancer and their families. To date, she has partnered with over a dozen charitable organizations, made several national TV appearances to include “Chopped” and received several awards and recognitions. Her restaurant is located in West Kendall and is known as a “hidden gem” and notably a destination dining must.

Paula DaSilva is the executive chef of 3030 Ocean at the Harbour Beach Marriott Resort &Spa, known for its delectable seafood, romantic ambiance and talented culinary team that under DaSilva’s tutelage, executes imaginative farm-to-fork dishes that highlight the flavors and freshness of South Florida’s local ingredients. Hooked on cooking since she was a child, DaSilva would help in the kitchen at her family’s Brazilian restaurants. Shortly after earning an associate degree in culinary arts from the Art Institute of Fort Lauderdale, DaSilva appeared on season five of the Fox show “Hell’s Kitchen” with Gordon Ramsay. DaSilva was invited to be a guest chef at the James Beard House in New York City, where she shared her innovative dishes with the sophisticated palates of their members and guests, and she is a seven-time participant in the Epcot International Food and Wine Festival in Orlando, Florida. After beginning her culinary career at 3030 Ocean in 2000, DaSilva was named executive chef of 1500˚ at Eden Roc Renaissance Miami Beach, which was the only Florida restaurant featured in food critic John Mariani’s annual article in Esquire magazine, “The Best New Restaurants in America.”

Cindy Hutson is a self-taught chef who developed a passion for cooking at the age of nine, and honed her skills through her teenage years. Named Chef of the Year by Chef Magazine in 2011 and Chef of the Year by Eater in 2012, Hutson and her life partner Delius Shirley currently own Ortanique on the Mile in Coral Gables; Ortanique on the Crescent at Camana Bay, on Grand Cayman Island; and chef Hutson recently expanded her cuisine to Harbour Island, Bahamas at The Dunmore. Her first venture with Shirley was Norma’s on the Beach, which received the coveted 5 Star Diamond Award for fabulous dining, and was touted as “the best Caribbean restaurant in South Florida” by publications such as USA Today, New York Times, London Times, Chicago Tribune and Ocean Drive. In 2015, Hutson released her first cookbook, “From The Tip Of My Tongue,” with tropical recipes accompanied with personal anecdotes. Later this year, Hutson will open Zest and Zest Mrkt in downtown Miami.

Dena Marino’s refined taste comes from her many years spent under the tutelage of acclaimed chef and restaurateur, Michael Chiarello. Her culinary sophistication has earned her accolades from Food &Wine, Bon Appetit, La Cucina Italiana, Wine Spectator and the New York Post. She hails from Aspen, Colorado, where she gained reputation as the chef of the much respected D19, Ellina and Ajax Tavern. In 2012, Marino opened MC Kitchen in Miami's Design District, showcasing her rustic Italian approach and the use of seasonal organic ingredients. Touted as one of Miami's best and best-looking restaurants, as well as one of the best in America by Esquire magazine, Marino has become a star in Miami's bustling dining scene. Her talents have also been showcased on the Food Network's “Follow That Food with Gordon Elliott;” Tom Colicchio’s “Eat Drink or Die” series, and in January of 2010, she challenged Masaharu Morimoto to “Battle Fig” on “Iron Chef America.”

Award-winning wines to be featured at area restaurants and hotels
during Best in Glass Month, March 15 – April 18


MIAMI (February 4, 2015) – On January 25 and 26, VeritageMiami held its Fifth Annual Best in Glass Wine Challenge. South Florida’s top sommeliers gathered at Johnson & Wales University School of Culinary Arts to taste through 325 wines, in search of those that represented quality as well as value - two of the most important elements they look for when choosing wines to serve by the glass at their respective establishments. After 14 hours of concentrated blind tasting over two days, they awarded 38 gold medals and 108 silver medals.

The panel of sommelier-judges from Miami-Dade, Broward and Palm Beach who sipped, slurped and spit their way through the challenge, included: W. Ian Beglau and Amanda Fraga of Michael’s Genuine Food & Drink; Timothy Bubar of Adena Grill; Yorke Dalton and Jennifer Wagoner of Zuma; Don Derocher of Council Oak at Seminole Hard Rock Hotel & Casino; Sean Florence of Il Mercato Café & Wine Bar; Carlos Fonseca of El Carajo; Philip Fuentes of The Dutch; Sylvie Gervais of Mizner Country Club; Kirsta Grauberger of Market 17; John Kao and Greg Rivera of The Breakers; Carol Lopez-Bethel of The Naked Bite; Luis Mejia formerly of Corsair by Scott Conant; Heath Porter of Uvaggio Wine Bar; and William Salogar of Truluck’s.

“The sommelier judges awarded gold medals to only 12 percent of the wines entered in Best in Glass, but gave silver medals to a third of the wines entered,” says James Beard Award honoree and VeritageMiami director Lyn Farmer. “Nearly half the wines entered are of medal quality, but the judges were particularly price conscious, awarding gold only to those wines that are of exceptional quality and represent great value. I look forward to a month of value-driven sipping at some of South Florida’s best restaurants as we get to try the medal winning wines with food!”

Over the next few weeks leading up to VeritageMiami, the award-winning wines will be profiled in various unique ways. From being highlighted in VeritageMiami’s public relations efforts, social media platforms and website, to being poured at VeritageMiami’s Fine Wine Tasting at Village of Merrick Park on April 16, Interactive Dinner on April 17, at the InterContinental Miami and at the Auction and Wine Dinner on the Diamond at Marlins Park on April 18. Each sommelier judge will select at least two gold medal-winning wines to feature at his or her restaurant during Best in Glass Month, March 15 – April 18, 2015. The four day culinary celebration begins with the Craft Beer Tasting on Wednesday, April 15, at Wynwood Walls. Set amidst world-renowned outdoor murals, the vibrant crowd will gather to sample favorites from local restaurants, paired with 100 craft beers and micro-brews at dozens of tasting stations.

On Thursday, April 16, at Village of Merrick Park, the celebration continues with the walk-around Fine Wine Tasting, where more than 65 wine producers and importers will line San Lorenzo Avenue, displaying a collection of 300 wines from around the world, alongside Miami’s most celebrated restaurants and caterers.

On Friday, April 17, the ultimate good time for foodies, Interactive Dinner, will take place at the Intercontinental Miami. More than 600 energetic guests bravely sport cooking aprons and toques as they prepare a three-course meal, under the direction of top celebrity chefs and with the help of hundreds of talented Johnson & Wales University students serving as sous chefs.

On Saturday, April 18, VeritageMiami will culminate with an Auction and Wine Dinner at Marlins Park. The United Way Miami Wine & Food Festival is marking its 18th year in a big way - by changing its name to VERITAGEMIAMI and bringing in one of the world's most celebrated chefs, Daniel Boulud, to headline the four-day event, April 17 - 20, 2013. The new name reflects the evolution of the event, which over time has become much more than simply a food and wine festival.

He is a generous and energetic supporter of Citymeals-on-Wheels, serving on their board of directors since 2000 and is also co-founder and Chairman of the Bocuse d'Or USA Foundation.

Chef Boulud is not the only Michelin-star chef to participate in VERITAGEMIAMI. On Saturday, April 20, Chef David Brovelli of II Sole di Ranco, a family-owned Relais & Chateaux property on Italy's Lake Maggiore, will prepare an Italian-themed dinner, paired with award-winning wines. The dinner will take place at the Orion Jet Center, a restored 1940s hangar at Opa Locka Airport, and will feature a live auction.

The other VERITAGEMIAMI festival events include: a craft beer tasting on Wednesday, April 17 at Wynwood Walls in the Wynwood Arts District; as well as a walk-around wine tasting on Thursday, April 18 at the Village of Merrick Park. Since its beginning 18 years ago, the United Way Miami Wine & Food Festival, now called VERITAGEMIAMI, has raised more than $12 million for the community.  All proceeds from VERITAGEMIAMI support United Way’s work in education, financial stability and health.
