This laidback, contemporary American gastro-pub, located in Miami’s Buena Vista neighborhood, features a weekly rotating menu of composed plates and tapas. Mainstays include cod cakes with aioli, sunflower seed-crusted salmon with bok choy and caramelized onions, and roasted tomato and goat cheese phyllo tart. Argentine chef Alan Hughes brings more than two decades of culinary experience to the table. The versatile and award-winning chef – who’s also an accomplished rock guitarist – has cooked for celebrities and world leaders including the late Nelson Mandela, actor Denzel Washington and tennis stars, Anna Kournikova and Gabriela Sabatini. At age 18, Hughes began an apprenticeship with Francis Mallmann, one of Argentina’s most distinguished chefs. In the 1980s, he moved to New York to attend the French Culinary Institute, where upon graduation, worked in some of New York City’s most acclaimed restaurants; at one point, he was even a private chef at the mayoral residence. In the mid-90s, he worked in Miami, before heading off to México to be the executive chef of an exclusive small hotel in Tepoztlán. He returned to the Magic City where today, he runs the funky The Embassy, short for The Embassy of Wellbeing and Debauchery. Hughes also developed an online culinary curriculum for an international cooking school, and was one of a handful of chefs approached by the French Culinary Institute to contribute a recipe for the cookbook, Fundamental Techniques of Classic Cuisine, which won a James Beard Award in 2008.

Niven Patel, chef de cuisine at Michael’s Genuine Food & Drink, has been cooking since childhood. He remembers as a kid, he would make up menus and let his family order, and then he would go into the kitchen and cook their selections for them. After culinary school, Patel’s introduction into a professional kitchen was under chef/owner Dean Max, where he spent six years at his 3030 Ocean Restaurant located at the Harbour Beach Resort and Spa in Fort Lauderdale. He then spent six months in Italy, returning to the U.S. to be part of the opening team of Watertable Restaurant at the Renaissance Baltimore, which paved the way for him to become executive chef at the four-diamond resort Cheeca Lodge & Spa in Islamorada. A short time after, he reconnected with Max and moved to the Cayman Islands to work at The Brasserie Restaurant and Market, where he was at the forefront of the farm-to-table movement. In 2013, Patel returned to the U.S. to work with Michael Schwartz at his namesake restaurant, Michael’s Genuine Food & Drink. After working with local farmers and purveyors, he was inspired to dig up his own yard to cultivate greens, fruits and vegetables. The produce from “Rancho Patel” is featured on menu items whenever possible.

Using her mother's chocolate recipe, and a vanilla one of her own, she made cupcakes as donations and for friends. Word quickly spread about the sweet aroma of her confections. The Spanish-Basque chef Najat Kaanache has made his debut at Piripi, which in Spanish is slang for “happy” or “tipsy.” Featuring rustic Spanish cuisine, the restaurant is a collaboration of three partners – Teo Arranz, Najat Kaanache and Gus Abalo. Diners enjoy traditional cuisine from Spain with a creative twist from Kaanache. They may begin their culinary journey with piripikoteo, an assortment of snacks, before graduating to authentic Spanish and Basque dishes with a focus on fresh seafood. Renowned sommelier, Ferran Centelles, curated an extensive wine list, which accompanies a creative cocktail program. Kaanache, who even handmade the tableware, calls Piripi a feast for the senses and the soul.

Home is where the kitchen is for chef/owner, Rocco Carulli, and that’s R House in Wynwood, a place that blends together food, art and music in a restaurant-lounge-gallery concept. The menu is simple, focusing on noncomplicated dishes made with fresh ingredients. Carulli, who was born in New Jersey and raised by immigrant parents from Southern Italy, can trace his love of food back to his childhood when he’d journey to the local market to pick fresh ingredients and then watch his father, a butcher, cut and prep the finest meats at home. Carulli got a taste for culinary life at age 19, working at a family restaurant in his hometown, and after a three-year stint working at a local bank, decided to focus on becoming a professional chef. He graduated from the Culinary Institute in America in Hyde Park, New York, and stayed in the Big Apple to pursue his culinary dreams. At age 32, Carulli teamed with chef Steven Frappolli and opened Edwige at Night, a seasonal venture in Provincetown, which they ran together for six years. Eventually, he took full ownership, and during the off-season, established himself in Miami, working for the late developer Tony Goldman at WISH café in South Beach. Inspired by Goldman and his work in Wynwood, in 2012, Carulli decided to launch his own restaurant in Miami, and that’s how R House came to be.

Miami-native Taylor Hicks grew up in a family of wonderful, talented cooks. Now it’s his turn to continue their tradition by taking many favorite family recipes and infusing them with his own style. Hicks has taken his mother’s Southern cooking and blended it with his father’s Peruvian influence. His grandfather from Idaho married a Peruvian woman of English descent, who created her own cookbook, and in college, his father used it as his culinary inspiration. The book was recently published and handed down to Hicks. His grandparents from Georgia and North Carolina were excellent cooks specializing in Southern dishes, but his grandfather also loved preparing Italian food, perfecting many dishes while visiting Italy. All of these influences have converged to create a strong desire on to create and bottle superior sauces and salad dressings. Oceanaire Seafood Room chef Kareem Anguin will join Hicks in preparing the tasting dish. Inspired and encouraged to become a chef by his beloved grandmother, with whom he spent countless hours as a child cooking with her in her kitchen in Jamaica, Anguin began his culinary career working as a line cook at Shula’s Steak House in 1998. While at Johnson & Wales University, he worked at the J.W. Marriott in downtown Miami and it was there he garnered the necessary skills and knowledge to embark on a successful culinary career. As a young up-and-coming chef, Anguin joined The Oceanaire Seafood Room in 2005 as a sous chef and, before the age of 30, was promoted to executive chef and partner and currently remains one of the youngest chefs in the Oceanaire family of restaurants.
