Beaker & Gray is a collaboration between Executive Chef Brian Nasajon and Bar Manager Ben Potts. Having grown up together, Brian and Ben shared a vision of creating a fertile environment for a team that works with them, not for them. They believe that their commitment to their staff will encourage their staff’s commitment to Beaker & Gray and its guests.
Master Chocolatier Ricardo Trillos

Master chocolatier Ricardo Trillos traded in his calculator for cacao. After being let go in 2009 from his job as an accountant, Trillos decided to turn his sweet hobby into a business and founded Cao Chocolates. It started as an online store focused on corporate clients and events, but in 2012, expanded into a storefront. The purveyor of handcrafted, fine chocolates, has perfected the chocolate truffle, and has become the go-to confectioner for brides, moms-to-be, birthday celebrations and other special occasions. Chocolates are made from 100 percent, premium Venezuelan cacao, and fine liqueurs, blended to create decadent sweets that are both flavorful and aromatic. Sweet selections without preservatives and cholesterol, as well as gluten- and sugar-free are also available. Cao Chocolates has received numerous professional awards, including the “Diamond in the Rough Awards 2013.” The company was also a finalist for the “Rising Star Awards 2014” from the Coral Gables Chamber of Commerce, and was chosen by WPLG Channel 10 as one of the best chocolate shops in 2013 and 2014.

Chef Jhonnatan Contreras’s career path is one that follows a simple, yet true principle: by having talent, taking risks and working hard, great reward is sure to follow. Contreras did just that in 2006, when he packed his bags and emigrated from Venezuela to Miami, where he began what has become a long, fruitful career at InterContinental Hotel Group. Starting out as trainee manager, he quickly moved to banquet chef, then in 2009, he went international and landed a job as chef at InterContinental Abu Dhabi. Contreras’s trajectory continued upward two years later, when he returned to assume the position of executive sous chef of InterContinental Miami, then he was promoted to executive chef of Richard Sandoval’s Toro Toro at the InterContinental. In 2017, 11 years after first coming to the United States, Jhonnatan Contreras was named executive chef of the entire InterContinental Miami.

It all began in 2009 when one custom request turned into many and there after a series of orders for parties in the neighborhood. By 2010, a steady pace of clientele was pouring in and J’s Delectables was founded, offering custom cakes and cookies. In 2013, founder Jessie Gardner began researching the healthier aspect of food and desserts. Soon after, J’s Delectables began offering vegan based sweets, showcasing and testing at different sport/health facilities and gyms. By 2014, Gardner began to expand J’s Delectables menu even more by offering meal options to those who wished to have a full party catered by J’s Delectables. Today J’s Delectables offers 100 percent organic and/or vegan foods and desserts to the health conscious and sweet tooth alike. Jessie believes no one should have to choose between healthy food and good food, both are absolutely possible with J’s Delectables.

KYU brings a fresh concept to Wynwood with its wood-fired Asian grill and a diverse menu focusing on professional yet relaxed service and a commitment to green practices. Head chef Raheem Sealey joined the team as sous chef in February 2016 and was quickly promoted to head chef thanks to his dedication, hard work and talent. Originally from St. Croix, Sealey moved to Miami in 2009 and enrolled in the Miami Cordon Bleu. While in school, he staged at Michael’s Genuine and following graduation quickly moved into some of the best kitchens, including Sugarcane, where he honed his skills on the robata grill; Zuma, where he met his mentor chef Michael Lewis; and Pao. He was reunited with his mentor with the opening of KYU in February 2016, where the duo routinely works together on menu development and execution, and set a strong leadership example for KYU’s up-and-coming chefs and line cooks.

Named after one of the world’s foremost culinary destinations, Lima brings the flavors of Latin America to the heart of Miami’s Brickell neighborhood. The menu features an array of Peruvian-inspired dishes including signature favorites, ceviche and lomo saltado, created by chef Kyriacos Petrou. A native of Cyprus, Petrou’s passion for food began at an early age, growing up in a family that valued good food and fresh ingredients. His first cooking lessons were in the family kitchen with his mother teaching him family secret recipes. Both his grandfathers grew their own produce, in addition to making their own wine and olive oil. Petrou followed his dream to America where he enrolled in the French Culinary Institute in New York, and learned from the greatest chefs, including Jacques Pépin. His culinary philosophy emphasizes flavors for which he credits the people, their languages and cultures as his inspiration. His goal is simple: to serve food that is delicious, made with a lot of love and passion, and using the best natural ingredients.

From day one, Sam and Roger knew that they’d hit the jackpot in March 2012, with their new cevichería in South Beach. They worked day in and day out and saw that people just couldn’t get enough of the fresh-from-the-ocean ceviches they were making at their tiny seafood shack. With Sam playing ceviche cook and Roger playing cashier, their partnership was a winning combo. They began with fresh-from-the ocean ceviches and then expanded their menu, first with burritos and burrito bowls, then with free-range chicken breast (we seek to please all palates)! Today there are seven locations, including South Beach, Brickell, South Miami, Coral Gables, Midtown, Airport and Aventura Mall.

Co-founders and managing partners, Paul Massard and Chris Nolte began Per’la Specialty Roasters with a mission in mind – to show the inherently beautiful flavor of coffee through their meticulous sourcing and roasting process. Massard is a Certified Q Grader by the Coffee Quality Institute, one of roughly 350 in the US, and brings 11 years of extensive coffee procurement, roasting, grading, farming, and production experience. He most recently held the position of director of supply chain for Honolulu Coffee Company overseeing all farming, processing, roasting, production/packaging, quality assurance and purchasing departments. Prior to that he spent 5 years as the green coffee buyer, production manager, and quality assurance manager at The Roasterie in Kansas City. Nolte brings to Per’La an extensive background in business development, branding, and marketing from a variety of industries including hospitality, healthcare, and logistics. He specializes in large, multi-site product implementations that require everything from needs assessments and product selections to staff education and quality testing. He has a true passion for enhancing the customer experience while helping businesses grow their bottom line.

R House is one of the pioneer restaurants that put Wynwood on the map. Launched by executive chef/owner Rocco Carulli, the venue is a place to enjoy food, art and music all under one roof. Carulli’s menu is simple, focusing on uncomplicated dishes made with fresh ingredients. Carulli, who was born in New Jersey and raised by immigrant parents from Southern Italy, can trace his love of food back to his childhood when he’d journey to the local market to pick fresh ingredients and then watch his father, a butcher, cut and prep the finest meats at home. Carulli got a taste for culinary life at age 19, working at a family restaurant in his hometown, and after a three-year stint working at a local bank, decided to focus on becoming a professional chef. He graduated from the Culinary Institute in America in Hyde Park, New York, and stayed in the Big Apple to pursue his culinary dreams. At age 32, Carulli teamed with chef Steven Frappolli and opened Edwige at Night, a seasonal venture in Provincetown, which they ran together for six years. Eventually, he took full ownership, and during the off-season, established himself in Miami, working for the late developer Tony Goldman at WISH café in South Beach. Inspired by Goldman and his work in Wynwood, in 2012, Carulli decided to launch his own restaurant in Miami, and that’s how R House came to be.
