This is the signature event of VeritageMiami, a vibrant part of our event for more than 20 years and this year, the celebration will feature some of our favorite chefs from past festivals. This is the ultimate good time for wine and food lovers to interact and cook with a trio of celebrity chefs guiding guests as you prepare a gourmet dinner à la carte, right at your table! This is interactive with the emphasis on active. Don’t miss the culinary experience of your life – cooking for a cause and having a wine-filled good time doing it. This is the most fun you’ll have at a hands-on culinary class because you’ll share it with friends and have the coaching of three of Miami’s top chefs. Of course, being VeritageMiami, there will be plenty of wine to taste.

Here’s how it breaks down in this time of social distancing – guests are seated at large round tables with an adjacent cooktop. There is a cooking station at each table where teams of cooks from your group prepare each course, guided by one of our celebrity chefs on stage.

In 2022 get ready for a “VeritageMiami All-Stars” dinner with guest chefs Eileen Andrade of Finka Table and Tap and Barbakoa by Finka in Doral; Chopped champion, Giorgio Rapicavoli of Luca Osteria and coming soon, the new location of Miami’s favorite, Eating House; and Paula DaSilva, executive chef of The Ritz Carlton Fort Lauderdale where she oversees all culinary operations for its acclaimed restaurant, Burlock Coast as well as banquets, in-room dining, pool and beach. These star chefs will be your champions as they lead you through preparing three signature dishes neatly paired with amazing wines. Then chef Jhonnatan Contreras of the InterContinental Miami Hotel will prepare a desert to wrap up the evening. To make the event more enticing (and more beneficial to our community) we have exciting live and silent auctions taking place between courses to benefit United Way Miami.

Meet the Chefs

Chef Eileen Andrade

FINKA Table & Tap / Amelia's 1931 / Barbakoa by FINKA

Eileen Andrade grew up in the kitchen working alongside experienced chefs and her grandfather whom started their family business back in Cuba. After coming to Miami and opening one of the city’s most well known Cuban restaurants since 1977, Islas Canarias, Eileen’s grandfather paved the way for his children and grandchildren to continue his culinary legacy.

At an early age, Eileen showed interest in everything creative. Mixing cuisines and reinventing traditional dishes that her grandfather brought from his homeland has always been a passion of hers. In 2011, Eileen opened up her first business, CUBANCUBE foodtruck. The foodtruck was an instant success on the streets and at large scale caterings. CUBANCUBE’S popularity showed how Miami’s food scene was lacking a real twist on traditional Latin cuisine. Steamed Asian buns stuffed with their famous “Croquetas de Jamon” topped with avocado, maple bacon sauce, fried shallots, and chives was one of their top sellers. Now, you can find similar twists on classics at her very popular restaurant in West Kendall, FINKA TABLE & TAP.

Eileen opened FINKA TABLE & TAP in July of 2014. Her focus on Cuban, Peruvian and Korean cuisines draws thousands of people a week through the rustic doors of FINKA. Her eclectic food menu mixed with craft cocktails using homemade syrups make for a different experience in the suburbs of West Kendall in Miami. In November of 2017, Eileen decided it was time to push the boundaries again and opened a cozy Cuban Diner across the street from her parent's restaurant, Islas Canarias Restaurant. Amelia's 1931 is named after her grandmother who was born in Cuba in 1931. Eileen's menu at her newest venture also showcases Latin-Asian fusion but in a more homie setting with old decorative accents brought from her grandmother's home.

In late 2021, the chef extended past the suburbs of West Kendall into Downtown Doral with her latest project, Barbakoa by Finka, located at The Doral Yard that features her iconic Cuban, Korean and Peruvian fusion style. new projects that will be coming to life in the near future that will extend beyond the suburbs of West Kendall, introducing more people to the world of Latin-Asian fusion done with integrity. Eileen plans to deliver new, innovative concepts in the near future that will continue to bring guests the ambiance and flavor they have grown to love.

Chef Giorgio Rapicavoli

Giorgio Rapicavoli is an acclaimed chef and owner of the wildly popular Eating House, as well as newly open Luca Osteria in Coral Gables. Born and raised in Miami, Chef Giorgio Rapicavoli has dedicated his career to championing Miami’s culinary scene and inflecting his Argentine and Italian heritage into the city’s rich melting pot of food and culture. He is the first-ever Miami contestant to win Food Network’s Chopped which quickly followed with a ranking on Forbes Magazine’s 30 Under 30 in 2012. In addition to having been recognized by the James Beard Foundation, he was a semifinalist for Rising Star Chef in 2013, a nominee for Food & Wine’s “The People’s Best New Chef” in 2014, and a semifinalist for Best Chef: South in 2015 and 2016.

Rapicavoli trained under Miami chefs Adam Votaw and Robin Haas before becoming executive chef at Chispa Doral at just 21. He honed his skills during a three-year executive chef stint at 660 at The Angler’s Miami Beach prior to opening his famed pop-up Eating House in Coral Gables in 2012. After the success of the pop-up, Rapicavoli reopened the same concept as a standalone restaurant to widespread critical acclaim. In 2015, Rapicavoli partnered with Grove Bay Hospitality Group to open Glass & Vine in Coconut Grove’s iconic Peacock Park. In September 2019, Eating House’s second outpost debuted at Time Out Market Miami, followed by the openings of Grails Restaurant and Spanglish Kitchen & Bar in Wynwood later that year. Rapicavoli’s newest project, Luca Osteria, named after his three year old son, opened in February 2021 on Giralda Avenue’s ‘Restaurant Row’ in Coral Gables. In the summer of 2021, Eating House closed its doors after nine years at 804 Ponce de Leon Boulevard and is slated to reopen spring 2022 at 128 Giralda Avenue, just steps away from Luca Osteria.

Chef Paula DaSilva

Executive Chef Paula DaSilva
The Ritz-Carlton, Fort Lauderdale

Since she first came on the South Florida dining scene in 2000, Chef Paula DaSilva has been a culinary darling; first as a rising star and later as an executive chef and one of the areas foremost talents in the realm of soulful, farm fresh cuisine. A member of the The Ritz-Carlton, Fort Lauderdale culinary team since 2017, initially as Chef de Cuisine of its acclaimed restaurant Burlock Coast, DaSilva now serves as Executive Chef of the entire property.

A native of Brazil, DaSilva attended the Art Institute of Fort Lauderdale, where she earned a degree in Culinary Arts in 1999. After graduating, she joined the Marriott organization in a kitchen position at 3030 Ocean at the Harbor Beach Marriott in Fort Lauderdale under Chef Dean James Max. Years of hard work and training paid off when DaSilva auditioned for and earned a slot on Season 5, in 2009, of FOX’s Hell’s Kitchen with Gordon Ramsey; she finished as the season’s runner-up and fan favorite, cementing her place as one of Florida’s celebrity chefs. After the show her profile skyrocketed and, in 2010, DaSilva took her talents to South Beach as the executive chef of 1500 Degrees at the illustrious Eden Roc Hotel.

Her culinary skills at 1500 Degrees earned massive praise and wide-ranging appeal, including a nod from Esquire magazine as one of the “Best New Restaurants in America” as well as a Semifinalist nomination in 2012 for “Best Chef: South” by the esteemed James Beard Foundation. DaSilva returned to 3030 Ocean as executive chef for a quick stint, then in 2017, DaSilva joined The Ritz-Carlton, Fort Lauderdale, helming Burlock Coast, heralded by many as one of Fort Lauderdale’s finest dining destinations.

In 2017 the chef won top prize at Cochon 555, going on to represent South Florida at the national Grand Cochon competition. She has served for many years on the Chef Council for the annual Taste of the Nation fundraiser for Feeding South Florida; is the current Culinary Chair for Junior Achievement’s Uncorked event; works closely with the Foodservice Council for Women (FSCW); as well as Women of Food + Beverage, a council established by Marriott International to help highlight women in the industry. In 2019 she was nominated for the J. Willard Marriott Award of Excellence, the company’s most prestigious award for dedication to service.
