Growing up in Miami, Giorgio Rapicavoli spent hours watching cooking shows and paid close attention when his Italian mother was cooking. After high school, Rapicavoli attended Johnson & Wales University, but he was drawn more to real-life restaurant work than to formal study. He left school behind to work for influential Florida chefs, such as Robin Haas and Adam Votaw, before becoming the executive chef at Chispa in Doral at just 21. He then served as executive chef of 660 at The Angler’s on Miami Beach for three years.
Rapicavoli has cooked alongside revered Chefs Ferran Adrià, Alice Waters, and former Slow Food President Joshua Viertel at Slow Food’s Terra Madre, an experience that changed his life, as well as his understanding of food. In 2011, he won the first episode of the popular Food Network show “Chopped,” winning again in 2014.
In February 2012, Rapicavoli opened the instantly popular pop-up, Eating House, which has now become a brick-and-mortar fixture of the city’s restaurant scene. In early 2016, Rapicavoli opened Glass & Vine with the Grove Bay Hospitality Group. Located in Coconut Grove, this seven-acre site rests along the waterfront with a restaurant that showcases Rapicavoli’s vibrant, local cooking. Most recently, he opened a second outpost of Eating House at South Beach’s Time Out Market.
